Ingredients
1smallzucchinigrated

1cup rolled oats
1cupwhole wheat flour
1tsp cinnamon powder
1/4tspnutmeg powder
1tspbaking powder
1/2tspbaking soda
1/4tspsalt
Wet Ingredients
2eggs
1/3cuphoney/maple syrup
1/4cupolive oil
1/2cupGreek yogurt
2tspvanilla extract
Instructions
Grate the zucchini, squeeze out the water.
Grate the carrots and in a mixing bowl add both the carrot and zucchini with the rolled oats, whole wheat flour, cinnamon powder, nutmeg, baking soda, baking powder and salt.
In a separate bowl add all the wet ingredients and mix well until everything is combined.
Add the wet ingredients to the dry ingredients and combine well.
Transfer to muffin tray and bake in a pre-heated oven at 180 degree C for about 20 minutes.
Cool down completely and then serve.Can be stored in the freezer in ziplock bags for unto 1-2 weeks.
