Healthy Muffins for Toddlers And Kids

My toddler is in a carrot loving phase and what better way to celebrate her latest vegetable love than to add them to her next favorite food, muffins!

This recipe of healthy muffins for toddlers packs in carrots, zucchini and oats and is the perfect add to the toddler breakfast rotation.

I make a big batch on the weekend and freeze them for a quick no cook breakfast on the weekdays when we want to grab something and leave the house.

These muffins are also low-sugar, each muffin comes to about 5g of added sugar and rich in fiber and satiety.

We usually pair them with a glass of milk or if we are headed out the door I spread a little butter on the top before heating them in the microwave and then grabbing them to go. A little added fat helps with extra fuel and satiety for my little one.

These are also great as a daycare or preschool snack box addition.

Ingredients
  

  • 1 small zucchini grated
  • 1 carrot grated
  • 1 cup rolled oats
  • 1 cup whole wheat flour
  • 1 tsp cinnamon powder
  • 1/4 tsp nutmeg powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • Wet Ingredients
  • 2 eggs
  • 1/3 cup honey/maple syrup
  • 1/4 cup olive oil
  • 1/2 cup Greek yogurt
  • 2 tsp vanilla extract

Instructions
 

  • Grate the zucchini, squeeze out the water.
  • Grate the carrots and in a mixing bowl add both the carrot and zucchini with the rolled oats, whole wheat flour, cinnamon powder, nutmeg, baking soda, baking powder and salt.
  • In a separate bowl add all the wet ingredients and mix well until everything is combined.
  • Add the wet ingredients to the dry ingredients and combine well.
  • Transfer to muffin tray and bake in a pre-heated oven at 180 degree C for about 20 minutes.
  • Cool down completely and then serve.
    Can be stored in the freezer in ziplock bags for unto 1-2 weeks.
