Energy bars are quite the rage these days. You see them everywhere from supermarket aisles to many healthy snack subscription boxes that carry these yummy treats for the health conscious among us. But these treats are so easy to make its almost a shame to put your money into buying packaged energy bars. My no bake energy bar recipe requires no baking skills and tastes divine.
This homemade energy bar is packed in protein, healthy fats, iron with no added sugar or other nasty ingredients. I started making variations of this recipe when I first found out I am pregnant. They are a great snack for pregnant and lactating mothers, so nutrient dense and filling at the same time.
No Bake Energy Bars
Ingredients
- 1/2 cup cashews
- 1/2 cup almonds
- 6 medjool dates
- 2 tsp desiccated coconut
- 1 tsp raw cacao powder
Instructions
- Soak the Medjool dates in hot water for 5 minutes2. Add all the ingredients in a mixer and blitz.3. The result is a gooey and fudgy mixture, that has to be packed tightly like a block shape into an airtight container.4. Cool this in the fridge for about 20 minutes.5. Cut into rectangular pieces and serve.
They store well in an airtight container in the fridge for about 7-10 days.
Now that I have an energetic toddler in the house, I give him these no bake energy bars as a healthy treat. They are chocolatey and fudgy just what little kids enjoy.
Raw cacao is a rich source of iron so this is especially a great snack for toddlers and young children. It can be packed in kid’s lunch boxes as the dessert option. I love making such no bake energy bars and other healthy sweet treats for my son at home rather than buy packaged food items where I don’t trust the ingredients.
Since these bars are dairy and gluten free they are also suited for people with these dietary sensitivities.
You can add toppings like desiccated coconut, dried cranberries or cacao nibs.
