These ABC muffins for baby don’t contain any added sugar and are naturally sweetened with fruit. They are soft and fluffy, easy for a baby with no teeth to eat.

EASY ABC MUFFINS FOR BABY NUTRIENT STACK

Apples – good source of fiber, simple sugars, Vit C, potassium, and various antioxidants.

Bananas – contain fiber, Vit C, Vit B6, potassium, magnesium, and manganese and are also a calorie-rich food.

ABC Muffins For Baby | No-added Sugar Baby Muffins

A no-added-sugar apple, banana, and carrot muffin for babies, toddlers, and kids of all ages. Perfect as a make-ahead snack or as a school lunch box added.

Ingredients
  

  • 2 bananas
  • 1 apple
  • 1 carrot
  • 2 eggs
  • 1/2 cup refined wheat flour can also use half and half whole wheat flour to refined wheat flour
  • 1/4 cup milk
  • 1 tbsp flaxseed powder
  • 1 tsp baking powder
  • 2-3 drops pure vanilla extract

Instructions
 

  • Preheat oven for 15-20 minutes at 180°C.
  • In a mixing bowl mash the bananas. 
  • Grate the apple and carrot and add to the mashed bananas.
  • Add 2 eggs, mix, and then add the flour, milk, baking powder, flaxseed powder, and vanilla extract and give everything a good mix.
  • Pour the batter into muffin cups and bake at 180°C for 15-20 mins or until a toothpick when inserted comes out clean.
  • Cool on a rack before transferring to airtight containers to store in the fridge.

SUBSTITUTIONS

You can make these muffins with whole wheat flour or a half-and-half ratio of whole wheat flour to refined wheat flour too. When using whole wheat flour ensure to sieve the flour 2-3 times before using it in the recipe.

HOW TO SERVE THE ABC MUFFINS

I like to make these ahead of time during my weekly snack prep and store them in an airtight container for the week. They stay fresh for the week when stored in a cool dry cupboard when the temperatures are low or store them in airtight containers in your refrigerators.

Heat in the microwave before serving the baby.

I serve the muffins with a cup of milk for a quick filling breakfast on busy mornings.

For babies under 1, cut the muffins into appropriate sizes for babies to self-feed and serve them with some yogurt for breakfast or snack.
