Ingredients
2bananas
1apple
1carrot
2eggs
1/2cuprefined wheat flourcan also use half and half whole wheat flour to refined wheat flour
1/4cupmilk
1tbspflaxseed powder
1tspbaking powder
2-3dropspure vanilla extract
Instructions
Preheat oven for 15-20 minutes at 180°C.
In a mixing bowl mash the bananas.
Grate the apple and carrot and add to the mashed bananas.
Add 2 eggs, mix, and then add the flour, milk, baking powder, flaxseed powder, and vanilla extract and give everything a good mix.
Pour the batter into muffin cups and bake at 180°C for 15-20 mins or until a toothpick when inserted comes out clean.
Cool on a rack before transferring to airtight containers to store in the fridge.
