I usually make fritters when I need to clear my fridge of leftover vegetables from the week. Any leftover vegetables go wonderfully in a fritter using simple ingredients like eggs, flour, and cheese to bind.
This recipe is also rich in protein and fiber both essential for growing children. Zucchini fritters are a great way to hide vegetables from picky eaters who love this as a meal with a little great yogurt or ketchup as a dip.
EASY ZUCCHINI FRITTERS FOR BABIES AND TODDLERS
This zucchini fritters recipe is great as a quick baby-led weaning lunch option or dinner.
It can also be plated as a side along with chopped fruit or as a snack for toddlers who are ever hungry as it is quite a filling meal.
Easy Zucchini Fritters For Babies And Toddlers
Ingredients
- 1 whole zucchini
- 1/4 cup whole wheat flour
- 1/2 cup cottage cheese/cheddar cheese
- 1 egg
- 1/4 tsp mixed seasoning any mix of your choice that contains oregano, rosemary,and thyme
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- Grate the zucchini and squeeze out all the water.
- To a bowl add the zucchini, shredded cottage cheese, whole wheat flour, egg, and seasoning.
- Add salt to taste for babies above 1.
- Mix well to combine all the ingredients.
- Heat olive oil in a non-stick pan and spoon out the zucchini batter flat on the pan.
- Cook to golden brown and the flip over to cook the other side. Press down the fritters during the frying process to get an even cook through the fritter.
- Once ready serve with a Greek yogurt dip.
