Add the broccoli, potatoes, almonds and 3 cups water followed by the vegetable stock and seasonings. (Skip vegetable stock when cooking for the baby or find salt free version)
Let this boil for 20 mins.
Once boiled let the soup cool down completely.
Now add the soup to a blender with the coconut milk and blend until thick soup-like consistency.
Transfer back to the pot and cook the soup for another 5 mins
Serve with whole wheat toasted garlic bread and a quinoa side.
